Prosciutto Wrapped Chicken

No matter how healthy you promise to be this new year, desperate times call for desperate measures. It's been -20°C (or colder!) these past couple days, which means -4°F for my friends across the border or the temperature at which if your hair is even a little damp when you step outside you end up looking like jack frost with icicles sticking out from your head...not a pretty sight. 

The only thing to do is fill yourself with warm comfort food...just in case hibernation is the only option.

Prosciutto wrapped chicken (stuffed with brie and apples) is the perfect cheesy, crispy, smoky foodgasm to remind you that there is hope at the end of the snowstorm tunnel.


I served to 6 but for about 3 people you'll need:

1 sizeable chicken breast (slice it into three pieces)--or 2 smaller ones
8 pieces of prosciutto (less if you want a thinner wrap)
A chunk of brie (a little smaller than your palm)
Half an apple

Each piece of chicken breast was sliced through the middle, filled with brie and a couple of apple pieces, folded together, topped with about two pieces of apple, and then wrapped in prosciutto.

Cook at 375 for about 30 minutes and baste every once in a while to keep the chicken from drying out.


For those of you that are stronger than me...you can serve it alongside a fresh, crisp salad. I made one of mixed greens, orange slices, green apple, and a citrus vinaigrette.

To make the vinaigrette, mix some freshly squeezed  orange juice, olive oil, a couple drops of lemon juice (or squeeze some fresh lemon juice if you have it), a splodge of mustard, and a good pinch of salt.

Me, I'll stick with this baby and my fingerling potatoes....I mean, weren't resolutions made for breaking?
